    TURN THAT TAP OFF!

    I fell for this one. To wash the pasta post cook, or not to wash? My [Italian] father-in-law looked at me doing this and shook his head sadly [as he did with much of my endeavours in the kitchen]. Cue upward turned palms and ‘Why you do this?’

    ‘I do it to wash the starchy starch off,’ confident retort. Well, no. Washing this gooey carbohydrate out is dipshit bad as it is this that allows the sauce to adhere to the pasta. Duh! Also it cools the pasta. Which is sort of ok if you have gone a stop past al dente.

    But really, you’ve already blown it. Don’t blow it, and turn the tap off…JD
