    WHAT’S FOR DINNER? CHICKEN MARINADE

    Everyone needs a good chicken marinade recipe in their life. If you don’t have one yet then you’re in luck because I’m going to share mine with you.

    I’m a working mum with three kids and so I know all about being time poor.

    This is a quick and easy marinade that’s become a staple in our house. I prepare it the night before, place the chicken in the fridge and let the marinade do all the hard work.

    In the fridge is where the magic happens! The key ingredient in this marinade is natural Greek yoghurt. Whilst a citrus or vinegar based marinade can make the meat tough, adding yoghurt gently tenderises the meat. The result is tender, juicy chicken that literally pulls apart. It’s drool worthy.

    I love using the marinade on thighs but you can use it on any cut. To cook your chicken the possibilities are endless you can BBQ, fry, grill or bake.

    The ingredients list for this recipe is really simple and you probably have most of the staples at home. Always a plus!!

    Once you have your ingredients at hand all that’s left to do is place your chicken in a large bowl with your marinade and give it a good massage so the chicken is coated in all that goodness!

    Having friends over? Use this recipe and cook your chicken on a hot BBQ. Serve it up with some salads and you’re going to have a happy crowd!

    Chicken marinade recipe

    Ingredients

    • 800 g Chicken thigh
    • ⅓ cup Greek natural yoghurt
    • 3 tbs Extra virgin olive oil
    • 2 clove garlic crushed
    • 1 lemon zested and juiced
    • 2 tbs oregano
    • Salt and pepper to season

    Instructions

    • For the marinade, place all ingredients in a bowl and whisk until well combined.
    • Transfer the marinade to a large zip lock bag. Add chicken and gently massage so the chicken is evenly coated. Marinate in the fridge for 30 minutes or overnight if possible.
    • Preheat oven to 200°
    • Line 2 oven trays with baking paper and place chicken on trays. Leave space so the pieces are not touching. Place in oven and cook for 25 minutes or until cooked through.
    • Transfer to a plate and cover with foil and let rest for 5 minutes before serving with your favourite sides.
