    HOP NATION + NAVI = ZYMURGY VENTURE IS OPENING IN WEFO

    You may have heard whispers from West Footscray locals, desperate for a local to go for a craft beer, that Footscray brewery Hop Nation, was opening up in the main drag.

    We reached out to co owner of Hop Nation, Sam Hambour and we can confirm the hopeful rumours are true. They have taken over the lease of The White Elephant restaurant at 561 Barkly St.

    But hold the press, that’s not all. It is a joint venture between Hop Nation and, drum roll please, Julian Hills from Yarraville fine dining restaurant Navi.

    “Initially we will launch as a pop-up beer garden until restrictions ease for indoor dining, with the aim to open early November,” says Julian.

    Of course there will be “a focus on beer with food cooked over wood and charcoal, with an integration of other fermented products showcased throughout the menu and drinks list.” Hence the name of the venue – Zymurgy – which is the practice of fermentation.

    Wefo locals who have got wind of this exciting venture said it is “the best news this year after lock down easing” and “looking forward to it adding more colour and movement to the strip.”
