    When I heard about a new Vegan Bourbon bar opening in the Footscray CBD, I was intrigued. Seven months on, and I’m not surprised by the success of this seductive little dive bar. Upon entering, you are welcomed by sensual décor thick with powerful iconography in worship of their namesake. Lilith, dates back to Judaic mythology, she was the first wife of Adam. She refused to be submissive to her partner and hence her early demonisation, but in modern times she symbolises empowerment and divine sexual energy. This bar undeniably exudes these vibes. 

    While the ambience might get you through the door, it’s the fare which will have you leaving content and coming back for more. Chef Tania Murdocco’s plant-based dishes are nothing short of decadent. You can expect a range of nibbles, satisfying share plates and mains to tease your tastebuds. 

    On my last visit we ordered five dishes between three adults. Served with salty crisps, the black sesame hummus is the ultimate in snack indulgence. The watermelon tartare was surprisingly savoury after its treatment of brine, umami marinade, roasting and preparation with capers, cornichons, shallots, and Worcestershire. The mushroom ceviche was fresh, light and moreish, paired with the most delicate of crackers. While the pillowy goodness of the house made gnocchi was the ultimate in creaminess. The wings were tasty and succulent and rounded off what was a satiating meal. 

    If you’re craving something more substantial, the menu caters for you too, offering up vegan schnitzel and mash, burgers and a stout and mushroom pie as part of the tantalising affair. Tania’s twice cooked crispy roast potatoes look truly drool worthy and will be on my next order. There’s enough here to satisfy even part time vegans. 

    A visit to Hail Lilith is not complete without a tipple, and the cocktail menu expresses a worship of bourbon. My favourite is their signature Hail Lilith, a delicious combination of bourbon, vanilla vodka pomegranate and a black cherry to bite into. Sipped slowly, this made for the perfect partner to the intimate burlesque show on the night which was nothing short of sultry. Whether it’s a ladies night out or a hot first date, Hail Lilith offers a luxurious experience for the senses not to be missed.
